Official 2022 BBQ, Smoking, Grilling, Baking and Beer thread

Enjoying a week in Maui with the family, so I had to find a fish market with a fresh catch. They had fresh Ono caught that day, so I found some seasoning and grilled them up on a gasser by the pool. Only 2 burners worked, but they got the job done. Made great fish tacos!

Ok I’m back!

Trial with billows. I test ran it the other night. I overshot 225 to 250 but held nice. Trying to hold 225 so I know how to use it. Trial one I had the dampener on billows too wide. It’s amazing how strong the fan it. My egg never chugged smoke like this. So I’m doing smoked wings then into the air frier to finish. I’m getting up to temp. Pics from the other night and today. More to follow! Hopefully good.

Would be fishing but tornado rain decided to come through. So fishing tomorrow and Sunday only. Boooooo!

Edit: 60 mins of smoke at 225. 145 off the smoker and then into air fried. I’m pleased. Sticky and somewhat crispy. I think you got to fry vs air. My air frier tops out at 400. We have a dual basket ninja.
Mom pleased though. Billows is the bomb! It has deff upped my egg game. Lol

Hey JIMM that is beauty of the recteq pellet smoker. It holds temps to a T. The technology is all in the wire fi controller. It is pricey but I never have to worry about big temp swings :cheers:
 
That's right guys, no one cooks breakfast anymore. They say it is the most important meal of the day. The griddle is definitely the most used outdoor gadget. We did asian stir fry last nite but I forgot to take pics. Way too many adult beverages :cheers:
 
Yep you guessed right again bacon and eggs for breakfast. Happy Sunday :cheers:

I don’t know about this thread but I knocked out a small brisket and attempted a smoked London Broil. The broil I cooked at 180 for 2 hours and seared at 500 to medium rare, after marinating 24 in soy, garlic, red wine vinegar onion. It was not too bad, not as tough as I thought it would be but it took some chewing power. Unfortunately the marinade made it taste like teriyaki jerky and I didn’t care for that a bit. Sorry I got no pics.
 
Rainey and cold non-typical Oklahoma last week of May so what's to do? Replenish our daily White bread........

Ok peeps! Getting ready for first cook on the baby recteq. Doing the chicken thigh recipe they recommend to season it. Did the 60 min 400 degree burn. Brined my thighs. Seasoned them. Just airing them out in the fridge a bit. I’ll post back finished pics. Nice little grill for my parents. Only them at the house so they don’t need anything big so I grabbed this one discounted when I bought the 700 for myself.

Edit: awesome! That little bad boy can handle itself. Chicken came out great. Heats up relatively decent and them after I was done eating I jacked it up to 500 to clean the grate. Got up to 500 no problem at all. I really like it.

I unboxed my 700. Yah going to need help. I have no idea how I’m going to stand this thing up after the legs are on even with the help of someone. It’s a beast. Maybe I should have sized down 1. Lol

JIMM I have the baby recteq 340 and it is perfect for 2 of us. My neighbor has the 700 and it has 3 times the cooking space. Wish I had room for the 700 as it looks like the perfect size for large cooks. :cheers:

I’m burning it in as we speak. It’s huge. Might be too much grill for us. Lol. I got to make MORE chicken today. Lol then tonight I’m going to smoke thick pork chops. T bones. I’m going to reverse sear them. I forcthe sear plates for mine. They are really really nice.
