I think I have backed my way into the cause of my problem (but let me know if I am crazy)
According to this thread I found, I am generating between 4 and 5 PPM based on ~12 hours of run time at 100% (that is what I set it too 2 nights ago)
What is the SWG Run Time Calculator? A tool that is designed to answer the common question of "how long should I run my pump/SWG". It calculates the run time of your SWG and Pump based on your pool size, the output of your SWG and your daily FC PPM loss. It is designed as a starting point...

I am going to check on FC tonight, but when I tested last night, I had gone from ~5.5PPM the night before to ~4PPM at point of testing (which would mean I lost about ~5.5 - 6.5 PPM of FC day over day).
In the last week, the average temperatures my home has seen is ~90-91 with a couple of days hitting the 93 degree+ range.
In addition, per the UV indexes I just looked up it is getting to Extreme almost every days and lasting that way for hours.
I am hoping the additional CYA will help (I have a sock in the skimmer bringing the levels up to the suggested 70PPM).
I am thinking that my SWG just could not keep up running at ~10 hours at 55% which was only producing 2PPM per day per the calcs from above threads tool.
On a seperate note:
My Salt per SWG has remained stable at 3200 PPM. I got some aquacheck strips and they came out at 2940PPM, which is about ~200-300 PPM difference which from what I have read is in the acceptable range of differences.
