The industry standard is to have the pool posts level to within 1".

That ground does not look like it was really worked to ensure it was level, meaning digging down the high sides.

It is within an 1 1/4" level all the way around. The low spot is 5" from the top and the rest of the pool is between 5 1/2" and 6 1/4". The whole area was scraped and the high side of the yard was scraped down to be level with the low side we then applied a thin layer of sand, about 2" across the area the pool would lay. Before the pool was put up we layed down a gorilla pad. We live in the mohave desert and the ground here is pack really hard. Weve never owned a pool and we tried out best to follow instructions when installing... any more input after this information is added will be appreciated!

Sounds like you did try to get it level, that was not clear from the picture. You just happened to have started more level than most I guess.
Given the ground, it is very unlikely that the legs are going to sink any significant distance, so you are probably fine.
