Several issues to address

Drain it a few inches and refill.

Mine is 2 inches below the return right now and it stays that way all winter. Just don't go crazy and it'll be fine.

Check your ph the day you refill but it wouldn't add chemicals right away as it may change on it's own over a few days. When you adjust ph and total alkalinity go slow and do it over a week. At least that's how I do it.

You heard correctly. Most above ground pool walls are flimsy and need the water to stop them from collapsing inward. A medium sized gust could destroy the pool. If your Doughboy was designed to be partially buried, it's likely beefier. But either way, pick a calm weather day to drain and you'll be fine.
It doesn't seem that flimsy but you're probably right that it is. I don't know if it was designed to be partially buried. Is there a way to tell?

It happens. Or equipment breaks and it happens. Or life gets in the way and it happens Or....... yeah. Cutting your losses and starting over is by far the easiest route. You'll only have to battle the little bit that you leave to keep the liner in place and it will be 75% diluted with new water after filling.

You'd need to look up the model to know for sure. It probably is because Doughboys are rhe Caddilacs of above ground pools. They are pricey but built to last.

The water level is just an inch or 2 below the skimmer. Any advice? I don't want to skip any steps. Lemme ask this. Can I pump the water out at one end while replacing it with fresh water at the other?
Yes. Read the section in this article on no drain water exchange...

 
I bought a Superior
1/3 HP thermoplastic submersible utility pump
I had one and it was a solid pump. (y)

When it died I gambled on a no name Amazon 1 HP pump that was cheaper. I didn't care about the savings, I have a large pool and wanted more ooomph.

I the results of the test from a couple of weeks ago are posted here somewhere. I'm happy to post again if needed. 🌞
You need to be testing every day, sometimes twice a day if you want to get the issue resolved.

Results from a couple of days ago aren't helpful, so a couple of weeks ago do not mean anything at this point.
You need to get your pH between 7.4 and 7.6 and your CYA down to something reasonable. This requires persistence and testing. Lots of testing.

How low should I let it get?
Are you draining or exchanging? If you are draining, I would not go lower than AT THE MAX, 18" deep. Might be better to go to 24" deep, and refill and see where that gets you.

I has not read that yet but I will while I am on the deck babysitting the pump!!!

We are doing the draining/exchanging. Talk about a slow process!!! We are gonna let it drain to 2'. Still got abt a foot to go.

Hard to tell from the pics but if the pool is buried at all don’t drain lower than the surrounding ground.
The no drain water exchange replaces water at the same rate you drain it out keeping the water level the same the whole time using care to not mix the two flows of water.
It appears you are just draining then replacing.
