You should continue to test and adjust your water balance throughout the winter... The good news is that you can cut way back on how often you test and adjust.

You need to decide how often to test based upon your test results.. It should not take long to get a feel for how much FC your pool uses this time of year. You will find that FC lasts a lot longer than it does in the summer.

I have a saltwater pool and tend to ignore my salt and CYA levels until the spring.

Yep. The typical Texas "winterizing" is to add chlorine less frequently and empty the skimmers more frequently.
 
We have hackberry trees hanging over our pool and I've spent more time caring for the pool lately than I do in the summer. I empty skimmers and Polaris twice per day and have had hazy water for a while.
