We are scheduled for plaster tomorrow (Tuesday), but expecting alot of rain on Thursday. Is this ok? Pool should be filled by then but not positive.

If the pool is filled before the rain then you will be good.
Otherwise the rain on the curing plaster can cause streaks and stains.

You need to follow the appropriate plaster startup guide for the first 28 days and then transition to TFP recommendations...
