Official 2018 BBQ, Smoking, Grilling, Baking and Beer thread

I really should stay out of this thread. It always makes me wish I could find a husband to bbq for me!

I'm going to assume this is because you don't like to cook on a grill or smoker, because any woman who can take care of her own pool can certainly cook on a Big Green Egg or even a pellet cooker. I have a gas grill, Big Green Egg, pellet grill, and dedicated smoker. My husband hates to cook but loves it when I want to buy a new grill - he says if I get a new grill then he gets a gun. Kind of a different twist on Brent's post of his wife getting jewelry.
 
Being a single head of household of 4, full time employee and full time college student doesn't leave me much time to bbq. I have a little Webber grill for the basics but I haven't used it this summer. What I use the most these days is my Crock Pot Express Pressure Cooker. It really speeds things up and doesn't heat up the kitchen. Some day when I finish school and pay off some debt I'll be able to buy a few more toys!

We welcome any and all submissions. However, you must pair your food creation with an appropriate “adult beverage” and post pictures of both if you want to be considered “competition” grade....

STEAK-BURGER, STEAK-BURGER, STEAK-BURGER!!!

So I seasoned and ground up 8lbs of chuck this afternoon. 3lbs went for dinner and the rest was vacuum sealed and frozen. Here’s my 3lbs ready for the burger press -

Burgers are prepped and ready to go into the freezer to chill before cooking -

Tonight’s dinner will be steakburgers with a side of roasted zucchini and sweet potato. The adults will get their burgers, sans bun, topped with sautéed mushrooms & onion (pinch of thyme and a good splash of Marsala wine). Here’s the sides on the grille -

After the sides finish, it’s time to cook the burgers -

Chilling the burger before you cook it allows the outside to sear while the inside stays cold. It works best on a super-hot flat top where you can basically blacken each side then let the burger slow cook the rest of the way on a cooler part of the grille. If the meat is room temp when you cook it, then the juices will boil out all the way through the meat and you get a drier end product. You don’t have to freeze them, the fridge is typically good enough if it’s cold. I prefer to freezer them until they are stiff but not quite hockey-puck territory.

The other option is to smoke them very low & slow until the internal temp is where you want it then....BAM! .... throw the on a hot grille a sear the outside. That would be the reverse-sear method. I do that with prime rib on the bone at Christmas time - 250F oven until the meat hits 135-140F theb pull the roast, crank the broiler up to “Chernobyl Hot” , return the roast to the oven and sear the outside for 10mins. Makes the outside roast crispy brown to a depth of about 1/16” and the rest of the meat is a cool, pink medium rare.....mmmmmmmmmmmm, gaaaaahhhhh prime rib mmmmmmmm (that’s my Homer Simpson drool)
 
Great idea to freeze a batch. I have a burger press but will probably never use it again. Smash burgers are just so much better and I find easier to control the doneness level. Wish my family would eat sweet potatoes but I’m the only one who likes them,,,

A lot on that plate zea3 and to top it off you have time for TFP. Simply AWESOME! I love cooking in our crockpot but never used a pressure cooker crockpot. I have a really good an super easy crockpot recipe that makes two meals at once (talk about speeding things up). Let me know if interested...

I get my meats from WinCo for the most part as they have excellent prices and good quality. Not sure if y’all have them in the Houston area? Note: WinCo only takes cash, check of debit cards! This is what I get for this dish:

Season the meat with salt and pepper (easy on the salt) and whatever else you like. Slice some onion and place rings in the bottom of crockpot. Place meat on top and sprinkle liberally with this:

No need to add any liquid as it will make its own. Place lid on crockpot and cook for about 4 hours on low. I test with a fork at about 3 1/2 hours as you don’t want to over cook! First serving is usually over a bed of rice (be sure to spoon some of the juice over it) with a nice salad or just tomatoe and cucumber slices. Next serving I shred the meat and make burritos or tacos.

Trust me the large pack of meat serves my family with 4 adults and 2 small ones. Bon Appetit!
