I don't think it's overkill to test twice a day for new plaster. It was somewhat tedious for me to keep pH in line at the beginning, but the real issue was FC. I found that once FC got out of line, it was hard to get back in line and keep it that way. In fact I am still having trouble keeping FC in mine on the second season, but I pulled a TON of tree garbage out of the deep end skimmer yesterday so I think that's the culprit.
Another issue I am finding is that it's not that easy to find 10% liquid chlorine not only in stock, but still fresh! Hopefully it's easier in your area but I wouldn't hesitate to buy like three times as much as you think you'll need because you never know if it'll be there next time you do!
I think I'm going to find the same with FC although it's only been a few days so far since we were just allowed to start adding chlorine on Sunday. Luckily both Lowes and WalMart carry the 10% stuff here. I just picked up 9 gallons from Lowes yesterday with "born on" dates of late March 2019. Probably the best I will find anytime soon.
