Official 2018 BBQ, Smoking, Grilling, Baking and Beer thread

Same here Matt except no wrap. 3 hours with smoke during the first hour then just spritz...fall of the bone tender! We have the same rib rack :)

Yeah, the wrap reduces the crunchiness of the bark but I like the added moisture it retains. All good...as far as I’m concerned, you can’t go wrong with pig-candy :pig:
 
Man, both those ribs look delicious, but sadly for my wife and I, can’t eat anything on the bone. (Don’t ask, just skeeves us)

We just did up some traditional burgers cooked up on the BlackStone, with some turkey bacon, shrooms, and some fresh provolone cheese. Served up with some tater salad and corn. Yum.
Would love to find some good Hot dogs, but I have not had any luck finding any here. Back east I would use either Kayem, or Maple Leaf pork/beef blend in the natural casing, oh mamma are those good dogs.

AJ’s down here in Tucson is an uber-fancy market store (the prices make Whole Foods look like a Walmart...) that has a ridiculously fancy butcher counter. They do their own sausages and hot dogs. Their beef & pork mixture is tasty and they do both natural casings and no casings. I love the “crunch” you get from the casing!! And their British Bangers are amazing too!!

No bone, eh?? To each his own I suppose....
 
Your not alone about eating meat off the bone Rob. Have you tried smash burgers on the Blackstone? I have used regular ground beef, ground chuck but my favorite by far is ground trimmings! My local Kroger grocery store puts it out every morning and it sells out every day. The fat content is a little higher as its ground from trimmings of other meats.

To come full circle look up smash burgers on youtube and get some ground trimmings as this will be the juiciest and most delicious burgers ever!

Yeah we have Von Hansen butcher here, and I use them quite often when going after high end steaks and such. They have like 1.21 gigga watts of brats, and some dogs, but nuttin like back home.

Cliffy, I’ve been perusing the smash burger recipes online, and it’s in me future. Just like the rest of us just barely upright meat loving Neanderthals on this rock, the persuit for the “perfect” burger rolls on!! :mrgreen:

Also The Pork Shop in Queen Creek (swing by the Olive Mill since you're that close for some awesome olive oil selections and a good lunch). There is also Midwestern Meats in Mesa on Main St just west of Greenfield. Between those, you may find something like back east.

Right on Gene, thanks for the heads up. I could throw a rock and hit Arizona ave, Ocotillo, that’s just south of the 202, right down the street. Gonna have to check it out! I’ve been to the olive mill a few times, they have some of the best oil and olives I’ve ever had. Oh, and their hand made gelato is rocking as well!! ;)

Here’s something for y’all to try if you haven’t already. I found this stuff a few years ago back east in Costco, they only seem to carry it during the summer time. It is THE BEST glazing, dipping and marinade for pork and chicken!! It is the perfect balance of heat & sweet.
When I first arrived here last September, I went to my local Costco and they had 4 bottles left, and so I bought em up. Now I’ve been waiting for it to come back in stock, and they still don’t have it. So I had to resort to getting it from Amazon as I was starting to have withdrawals. It’ll only cost you a few bucks more per bottle then Costco, but still worth every finger licking penney! :mrgreen:
 
Yup, we get that down here in Tucson as well. Haven’t seen it since last year. Great for making a rotisserie chicken on the grille.
 
Matt you’re a Costco child like myself. Pick up some of their boneless pork chops and marinate it in this stuff overnight.(you can get it at Fry’s) Then of course use the pine/hab as a dipping sauce. So friggen good!

With a family of 4 kids and a household of three adults, bulk shopping for the frequent-use stuff (toilet paper, cleaners, laundry supplies, etc) is an absolute must. I’m there at least 3 to 4 times per month. With an Executive Membership, I easily earn enough “cash back” to pay for my renewal and then some every year. So yeah, we do Costco big time.

We have 2 here in Jacksonville however they are too far for me to drive to and when you get here it is like a zoo in there can never get a parking space and loads of traffic. I hate Costco and hate anyone that likes Costco and we don’t like anybody that likes Costco [emoji23] now that I have gotten that off my chest. That is why I make my own special barbeque pepper sauce. It is the perfect sweet smoky and spicy sauce. Everyone I serve it to wants the recipe. In fact I have had some of the girls threaten to come over to help me make it. Hummmm sounds like a Christmas gift [emoji320] [emoji482]

You don’t go there on the weekends, it’s insanity because all the freeloaders go there to eat the taste-testers being handed out on every other aisle (I hate that!). You also don’t go there at lunch time because the Costco lunch area is a mob scene of people trying to get their $1.50 hot dog & soda (Pepsi products :pukel: but their hot dogs are divine!!). You go there on Tuesday at 10am when they open and it’s a perfectly lovely shopping trip!!!

Plus, where else are you going to get a 75” OLED LG Smart TV for around $9.99 with free delivery and installation?? The price drops to $8/TV if you buy a palette of 10 (customers limited to two pallets!) :scratch:

(I’m joking about the TV price but they do have excellent t prices on all their electronics)

I get it. Actually we do like Costco and wish one was close to us. The problem is that Sams is less than 5 mins so this is our go to place for bulk items and Walmart is about 90 secs from the house. So guess who gets our business [emoji482]

I do just like Matt said, Tuesday get there by 9:45am (they usually roll up the door like 5-10 mins early. Get in, power walk the aisles, grab everything on my list, (and then some) and beat feet out of there. Oh, and stuff a slice of cheese pizza in my mouth on the way out.

We pay extra to be a Sams plus member so we get to shop an hour or two before it opens to regular members so that is the time I shop. [emoji482]
 
I do like their pizza...great for parties too as you can buy a bunch of pies for super cheap. Best way to feed a bunch of hungry teenagers swimming in my pool - just throw a couple of pizza boxes out by the pool, a box of the Lays potato chip snack bags, a cooler full of sodas and ice and close the door. Last one out of the pool has to skim all snack bags out of the pool. I only wish I had a covered patio out by the pool then I’d put a big screen TV under it, an Xbox, and comfy chairs then just leave them out there all day long....
