Official 2018 BBQ, Smoking, Grilling, Baking and Beer thread

I do like their pizza...great for parties too as you can buy a bunch of pies for super cheap. Best way to feed a bunch of hungry teenagers swimming in my pool - just throw a couple of pizza boxes out by the pool, a box of the Lays potato chip snack bags, a cooler full of sodas and ice and close the door. Last one out of the pool has to skim all snack bags out of the pool. I only wish I had a covered patio out by the pool then I’d put a big screen TV under it, an Xbox, and comfy chairs then just leave them out there all day long....

Well....the pool was originally going to be built in the backyard right off the covered patio there. It would have been the perfect party pool setup - covered patio, ODK and pool! Buuuuuuuut ..... unbeknownst to me, the original developer of the house ran MOST of the services (gas, electric & sewer) right through the middle of the backyard :rant: That makes the backyard completely excluded from any kind of extension or development aside from just simple basic landscaping. I was sooooo incredibly ticked when I realized that and kicked myself for not looking into that as I would have offered a lot less for the house. But, the side of the house had enough room for the pool so it went there. However, that made it impossible to do any significant decking or build out there. There are some things I could do but won’t because it simply would be a waste of money to pump more dollars into exterior work. As it is, we’ll never recover much of the cost of the pool so future work will be interior upgrades - new master closet, new windows (desperately needed) and a likely kitchen remodel. When the kids leave in 16 years, I’ll rip up the flooring and redo it in tile and stone work.

Hold on there Brentr...Costco is a good thing just have to choose your time to shop and don't shop on impulse. You cant go threatening to unfriend, disassociate or otherwise not like the sight of casual COSTCO shoppers without giving up your recipe for your dipping sauce :)

All you guys talking about Costco. We have 2 here in Jacksonville however they are too far for me to drive to and when you get here it is like a zoo in there can never get a parking space and loads of traffic. I hate Costco and hate anyone that likes Costco and we don’t like anybody that likes Costco [emoji23] now that I have gotten that off my chest. That is why I make my own special barbeque pepper sauce. It is the perfect sweet smoky and spicy sauce. Everyone I serve it to wants the recipe. In fact I have had some of the girls threaten to come over to help me make it. Hummmm sounds like a Christmas gift [emoji320] [emoji482]
 
Okay guys I think I may have posted it before but here it is:D

- 1.5 cups of bottled barbecue sauce. Pick your favorite kind I usually go for a very smokey kind. Store brand is great to use.
- 1 cup ketchup
- 3 tablespoons A1 sauce
- 2 tablespoons Worcestershire Sauce
- 1-2 oz apple cider vinegar
- 1/4 cup brown sugar
- 1 tablespoon fresh cracked pepper
- 1 tablespoon hot smoked paprika
- 1 tablespoon hot chipotle pepper ( add extra if you like it more spicy )

Add all ingredients in pot and bring to a slow boil using a whisk (Medium high heat) The ingredients should be very thick so you will get very large slow bubbles. Do so for about a few minutes and allow to cool. Transfer into squeeze bottles ( 0.99 at walmart ) and store in fridge. This sauce is great on anything fish, poultry and beef, even seafood. You will be the the star of the day. :cheers:

OK this thread is going to cost me some money. I love smoked meat, but in my adult life all I have ever cooked on was wood (mesquite and catclaw, occasionally oak), and it has always been grilling, not smoking. Just this year I have been playing around with some lump mesquite I found on sale, and I have to say it is a learning curve.

Last night I started looking around for wood/charcoal smoker information and found something that looked like it might be a good way to get started with out much work (always a prime consideration).

It seems to a charcoal only device though I did make an inquiry about wood. I am ok with that but am curious if there are non-commercial set-ups that can use real wood in a fairly easy manner (and that don't cost as much as a used car!)

Would love to get your opinions on this.

Normally I would agree but I can’t eat corn tortillas, they make my stomach very upset. So I either use flour tortillas OR lettuce wraps if I’m feeling healthy ...
 
Yummy looking ground beef. My wife now bans me from buying pre-made burger patties and frowns upon any packaged ground beef!! So I’ve started buying extra chuck roast at Costco and I grind it up and vacuum seal it. Then into the freezer.

If you don’t have a vacuum sealer, check them out. I have a FoodSaver brand unit and I use it all the time seal up extra meat and leftovers for long term freezer storage. Zero freezer burn when I use that.

Ok no need for a battle then. Bummer though, corn tortillas are actually pretty healthy (if they aren't deep fried) - whole grain and extra calcium!
 
Im flour tortilla all the way! Crisp them up and stuff away... I have tried my best to like corn (white and yellow) but just not the same to me. Just like plain old white bread over wheat bread!!

Let the arguments begin :)

Pv2 eating healthy is good (as I certainly try) but every now and then ya have to let loose :)
