I’ve done enough reading to know I need to check my check valve. The question is, which one is my check valve? :)

Your pictures at an angle don't let us see how the plumbing all connects together.

I circled in red a check valve but can;t tell what it is connected to.

No. You have valves on each of your suction and return pipes. You need to turn them off one at a time and determine what they go to and label the pipe. I can’t do that from a picture.

You have a valve over the check valve. Shut that valve and see if your spa still drains.

You need to spend some time with your equipment figuring out what each pipe and valve does.
