I noticed this last year when it got cold but my pump would begin gurgling as if water is moving out of it when the pump turns off. And then once it warmed up i didn't seem to have this problem... Could just be a coincidence. Anything I should check?

Cold weather shrinking an O ring and letting air in.

It is the reason the Challenger space shuttle blew up.

You can also use your ears, but it has to be pretty quiet out.
Right after the pump shuts off, listen carefully all around the pump, and suction side valves and plumbing. Sometimes you can hear a quiet "whine" or sucking sound where air is seeping in.
I once had a suction leak on one of my pools that was driving me nuts. It turned out to be a tiny hairline fissure in the clear pump lid. I never would have seen it, but I heard it.
There are ways to pressurize the suction side of the system, looking for a drip, but the process varies depending on the existing plumbing.
Any breech on the pressure side would usually result in a drip or squirt.

Which Hayward filter do you have? Some of their larger ones that were installed at the time the NorthStar pump was being used have an automatic air-relief that will allow the system to sound as you describe. The auto-relief would open when the pump turned off and allow air into the filter allowing the system to drain. Doesn't hurt anything.
