Hello, I wasn’t around for the pool build and wife doesn’t remember. Can anyone tell us what layer is the original vs wear and tear. Looks like a stained layer, non-stained, light blue and sky blue.

Are you saying you had a new layer of plaster put on old plaster?
I doubt the new plaster wore enough to expose the old plaster. And they should have put a bond coat on the old plaster that you would see before the old plaster color.
I think you are seeing various staining and plaster wear exposing different coloration of your new plaster.
