What's inside those japs?

I split those jalapeño length-wise, remove all the pith & seeds and then stuff them with a mixture of whipped cream cheese, shredded Mexican cheese blend and bacon bits. I also had some fresh roasted bell pepper that I chopped up and added to the cheese mix. I then topped the jalapeño boats with panko bread crumbs.

THEY. WERE. AWESOME!!

Here is my fave stuffed jap/pepper recipe. 1lb sausage browned mixed with 1 pack cream cheese. Put inside halved peppers, wrap with thick Applewood smoked bacon put in oven at 350 until bacon is how you like it. I have done this with jalapeños, anaheims and little sweet peppers.

Nice! I think those are called Armadillo Eggs if I'm not mistaken. Definitely a Super Bowl or World Series party favorite for sure!!
 
Stuffed Bell Peppers:

Made these little gems last night, I knew I was going to make them so on Saturday night I made home made sauce to use instead of plane old tomato sauce.


Bought about 5 bell peppers, cleaned out the insides and cut up about half of one and about half an onion:






Then, I par-boiled the 4 left for about 5 minutes:




In a cast iron skillet I put about 2tbs of EVOO, then added the chopped bell pepper, onion and garlic:




Next, I added 1lb of pork sausage and 1lb of hamburger meat:




About 5 minutes in, I drained all the fatty oil:




I then added the home made sauce that I made the night before and also about 1/2 cup of cooked white rice:









Mixed everything up to get ready to stuff!!!! I placed the 4 par-boiled peppers in a baking dish with about an inch of water at the bottom:







Next, got them all stuffed up:




I then dabbed a spoonful of sauce on top, then added shredded mozzarella and grated Parmesan cheese and placed them in the oven at 350° for about 20 minutes, then I broiled them on high for about 3 minutes:











Now, let's eat!!!!!!

 
Nice peppers!!

I do that with lean ground turkey, sautéed onions & mushrooms and wild rice. Top it with diced tomato and some chopped jalapeño. It's the "healthy" alternative to the way you (and my mom!) make them. Your way definitely has more "flavor"!!
 
I find that they taste best when you use ground turkey with onions, garlic and a variety of chopped mushrooms. I like to add fresh thyme and rosemary to the mix as that pairs well with the flavors.

Smoking some pepperoni cheese. If it lasts long enough over the winter it will be wonderful pool side this summer.

What is pepperoni cheese? And where do you get it?

I'm going out on a limb here, but I think it's cheese with pepperoni in it. :cheese: And apparently, you can get it at drywall guy's house in PA. :shock:

Looks tasty! I wonder if he would send out samples......
 
Oh boy looks like i better get more cheese in the smoker !!!! At least wait till the pool is opened back up guys lol. I have some smoked onion cheese also if anyone wants to try that !
