You may have had a small leak for a long time and never realized it until you went looking.
You say pool is now dropping by a lower rate. That implies a different leak or now from one leak instead of two.thid
If both of skimmers are empty and the water is still dropping, is it possible that :Water can be siphoning from skimmer 1 to skimmer2.

I've just turned off the main drain and the left one. I believe the main drain is the one in the middle.You have valves on each suction line.
Isolate the lines with one line on at a time and see if the water level falls.
Anything is possible.Is it possible that I would have damaged the piping system by not putting back correctly the multisport valve system when I changed the O-Ring system ? I have done this procedure already few times but last time I did, their was a leak of sand, i open it again to see and I've noticed a little crack at the bottom of the multisport valve, the piece that connect to tube connecting to the lateral. I seal it with a bit of silicone and out it back. I may have done something wrong ? The pressure looks great when i started the pool and the jet, the skimmer everything was working great.

All the suction lines are closed and all the jets are above water. I put some coloring around the light and i don't see any suction.You are more likely to have a leaking liner then a leaking pipe.
Turn off all the suction lines, put plugs that you should have from winterizing in the returns, and see if the liner holds water.
Filling the water everyday will kill my water bill !
I'm going to do this. I still probably have 6 feet of water. Do i need a plug for the pipe and one for the hydrostatic valve ? So i can check also the valve and see if it needs to be replaced or if It's just the seal?Unfortunately that is a cost of home and pool ownership.
You can get into the cold water and plug your main drain. How deep is it?
Thanks for your help i appreciate. I will do that and that will be as far as i would go.I would plug the main drain and squirt some dye around the hydrostatic drain and see if it gets sucked in.
I would not remove the hydrostatic drain unless you really know what you are doing. Do itw rong and your entire pool will empty.
