Our Jandy drain cap is cracked. I ordered a new one. Is it as simple as taking the old one off and putting on the new one? Will the entire filter be emptied? And then what do I do?

Hey Dushcene and Welcome !!!!!
Change it reasonably quick (pump off) and you won't have much water get out. Bleed the air valve after once the pump is running again.
