I reverse seared some bone in rib eyes tonight. 3rd time doing the whole reverse sear thing cliff showed me.

I’m a fan. My steaks have never been better. I’m still not used to seeing them after they slow cool first. They look so raw still but man you can tell how tender they stay. Then that sear just just seals them. I let them stand for 5 mins still even though they say you don’t need to. It really helps the juice expand even more.

Just a great great cooking method!
