Official 2024 BBQ, Smoking, Grilling, Baking and Beer thread

I wish local pizza places would sell Dough, but they don’t around here .
I’ve tried several recipes for homemade most are delicious or at least decent (except this one lol)

Main thing is, only a few ingredients vs a paragraph of words I can’t pronounce.

I take a shortcut on dough. I buy it at Trader Joes. I can't make better from scratch.

My brother in law has, according to him, perfected his dough recipe. It involves 3 days of work, letting dough rest at specific temperatures and times, and lots of planning ahead.

My recipe is I buy frozen dough balls from my local grocery store: https://www.shoprite.com/sm/pickup/...original-pizza-dough-16-oz-id-00759008192667/ Flour, Water, Yeast, Salt, Oil, Sugar - which I don't understand because the packaging says no added sugar. Or I buy refrigerated dough balls made at the pizza counter in the same grocery store (same ingredients, but no sugar). This grocery store has an independent catering unit in it, so they make their own dough.

The upshot is, his is better. Marginally better. Not worth the effort in my opinion. It does have a slightly fermented flavor which is nice, but when I decide I want to fire up the Ooni for pizza that night, I don't want to wait 3 days for dough.

And this is why we just don’t cook pizza that often. Even a dough that is ready in a few hours is usually too long. We’re kinda spur of the moment types and I can have a pizza delivered from a local joint in about 15 minutes.
 
Maybe we could all pick a “meal” or ingredient to make. (say we pick one a week)
then post pics of our versions , to get a little inspiration from others.

For instance , my taco Tuesday looks like the exact same taco every Tuesday for the past 3 years haha ( so it’s not always Tuesday but I’d say we eat tacos at least once a week)

Could be fun to see how others make stuff.
Could go something like
“Show me what you made with_____ this week” or “let’s all make _____this week”


Anyone?

I rotate tacos, taco bowls, burritos and quesidillas but the guts remain mostly the same. :ROFLMAO:


Another staple is Breakfast Thurdays. I rotate pancakes, French toast, omlettes or egg sandwiches. Every Thursday we are getting beat up in the weekly grind and the little bit of comfort helps push us into Friday.

Then someone else choose next weeks dish/ingredient

(Should this have its own thread? I’m not trying to steer it away from smoking, grilling, baking and beer)

I am sitting in my home office right now, let me tilt my head up an look out the window. Yep, the Italian Restaurant / Pizzeria is still 100 yards from my front door :)

And the deli / bagel store and liquor store is still there too - sometimes this location makes cooking at home really rough.

We had a small strip mall with only a pizza place, ice cream place and bagel store back when. Getting out of our work vans at lunch one day I asked my coworker what we should get and he looked at me like I had 5 heads and calmly said we should get 'a pizza bagel ala mode'
 
If you're interested in pizzas I highly recommend Vito. I've watched his channel and followed his recipes and it turns out great. It does take planning though. Here is is channel
And here is one of my pies. The crust is.light and airy but crunchy with a great flavor.

Wood fired pizza oven, got it from costco
I think about getting one of those (or the propane ones) at least 3 times a year. And then I think about how much work and preparation and forethought it takes to make pizza dough and... well I haven't bought one yet. I do love homemade pizzas and calzones but I have to admit, I'm not that great at starting meals more than a day ahead of time. The one thing I don't mind prepping early is marinades, especially for things like carne adobada. For some reason, making pizza dough always feels like more work to me.

Anyway, here's a pair of tri-tips I dry brined, then dry rubbed, smoked, and seared on my propane grill this last Tuesday. It was so hot here in Mesa that the thermometer in the lid of the grill was reading 150 before I even turned it on, sitting in the afternoon sun. My pavers are about the same temperature when the sun is on them, so I have to wear shoes while grilling, even though the grill is 5 feet from my back door!

Unfortunately no - a bank and a hairdresser.

But the Italian place does have gelato and cannoli

The deli/bagel store also makes some baked things - crumb cake, cookies, baklava, hamantaschen, and a bunch of Mediterranean type foods. - Howard's Bagels

We cook at home 5 to 7 nights a week. Sometime it is pretty impressive. Other times is it throw together some stuff. Especially over the summer, with the garden cranking out so much stuff, a lot of times it is pasta, with vegetables, and some sort of chicken stock sauce, or white wine/lemon or something like that.

I did just make a quart of vinegar peppers for sandwiches with peppers from the garden (Italian Sweet, the Cowhorns are not ready yet).

So yea, I am up for posting things.

(And last night was Taco Sunday)
