Rather than use lamb (because no one but me would eat it), I decided to grind up some chuck and bacon. Followed Alton Brown’s recipe and then channeled my inner- @bdavis466 and troweled the mashed potatoes on nice and thick. It would have been cool to sculpt it into a wooden texture, but I’m not the artist Brian is....my sculpture would probably be NSFW ....

So envious you live so close to the Rec Tec factory. If I were you I would be visiting every day looking for dealsI just looked at the bag of pellets- Hickory. I think I'll spin by the RecTec factory and pick up something "sweeter" like the apple or peach you mention. They're but 5 minutes from my house and apparently you can often catch them cooking stuff up.
Any of y'all make up your own rubs? Got any rub recipes to share?? Do I even *have to* use a rub??

On a side note I used thick sliced bacon and noticed that it did not crisp up near as much as regular sliced bacon.
But everyone loves crispy bacon ?In my opinion, crispy bacon that is overcooked to the point where it snaps when you bend it and turns to powder in your mouth is ruined bacon. Bacon needs to be cooked through but it should have some chew left to it. Otherwise you might as well just grab a box of imitation bacon-flavored Redi-Bits .... right @Arizonarob ?
