Stonescape redo

our contractor is going to redo our Midnight Blue Mini to Moraine micro because anything with a black aggregate is currently coming out brown. And a brown pool is not great.
He would like to start this construction in December. We are in Southen California but I still worry it will not cure well since it will be cold and damp. What do you think we should wait until spring? Thank you! Here is a photo of color options (top down: moraine micro, midnight blue Quartzscape, aqua mini) he gave me on my current (midnight blue) steps. Does anyone have photos of their moraine pool? I would love to see how dark it actually is.

From certain angles and depths, the green undertones start to show. Pool is 5ft deep at the drains in the middle so the color would probably develop even more for folks with 6-12ft deep ends. It's probably worth sharing that Moraine plaster color comes from Quartzscape Barbados blue dye pack(s) along with the blue & turquoise colored glass beads that come with any micro pebble finish mix.

I really like the bottom one due to all of the white in it. My second fav is the top one but do worry that the installers have to be very good to keep the "hand done" problems at bay-trowel marks showing, swirls, etc.

Make sure they do a FULL chip out of old plaster.
 
The plaster company I use is out of Orange County and will plaster during the winter months.
His trigger points for postponing an application is rain or snow (they do travel to the local mountain regions).
He has been in the business for over 40 years doing so.
I would be comfortable having the application process done during the SoCal winter months.
