Ready to seal coping gap all around the pool

Last September I posted on the problem of 'how to seal the coping gap all around my pool' and received very useful guidance from several members. I am finally getting around it last week and have started working on the project.

I will be using 'Deck-o-Seal' to seal the gap, received the shipment today. Since the gap at some places is wide and deep, I have used all-purpose sand and pea gravel as fill material to decrease the depth of the gap. I will also use backer rods at some spots.

The question I have now is about the Skimmer at deep end. Please see pictures (via photo bucket). As you can see, a small piece of concrete from the top of the skimmer has completely separated. It’s just now sitting there, I can pull it out and top of the skimmer becomes uncovered.

I have following questions:

1. How do I repair that specific spot on top of the skimmer?

(a) Remove the piece, use concrete mix to fill that spot, and then pour Deck-o-seal in the remaining gap by the coping?
(b) Do not remove the piece and only use Deck-o-seal all around it (not sure if this going to work)?
(c) Remove the piece, do not use new concrete, and only use Deck-o-seal for that entire area on top of the skimmer?
