Pool build turned into a nightmare - travertine help

Hi everyone! My pool build which began in March and had a May completion date is still not completed. That all being said, it's been endless issues since we began- with the biggest issue being the builder took down a part of my fence and my dog went missing out of it. She was missing for 34 days, and finally we got our girl home. Now I'm able to focus back on the pool, which has so many issues with the decking and stone work. My question for anyone who has a travertine pool deck is do you have uneven pieces? I'll attach pictures which show my issues below.

The issues we've dealt with are:
1. First, the coping was put down with bullnose against flat pieces, so they had to rip it all out and re do it.
2. Different color grout has been used all over- white, grey, tan (not a major deal obviously, but still strange)
3. The travertine was to be in a french pattern, and yet it's not in any pattern at all. My builder when I questioned him on this stated: "There's no pattern to a french pattern it's just random" - which seems to be completely wrong. I'll attach a picture showing how odd the pieces are
4. The travertine is actually popping up in some places where if I step on the back part of it, the front pops up
5. There's uneven pieces all over with little lips that you'll stub your toe on. My builder said this is "normal" and how it works- but it's clear that they aren't in level
6. When they installed the travertine, they put down dirt, then the DGA and the DGA they did go through and compact with a machine. But then when they laid the travertine they just tossed down some sand and put the pieces on top if it. The sand was not compacted. I'm not sure if this is a big deal or not
7. Any "boarders" they actually hand cut the pieces and it's uneven and looks bad
8. The stonework on my wall by the waterfall is all uneven and looks bad

My question to you guys is- is the way this travertine looks normal? Is it supposed to have pieces that aren't level? My biggest concern is that if pieces are not level, when things freeze and shift, I'm assuming it will get worse. He's agreed the stone wall is not okay and need to be fixed, but he's saying the travertine that's popping up in places is fine. He said he'll fix the spots that are actually coming up when you step on it- but even that I think is very odd but I'm not a pro at this and any help is greatly appreciated! The stone wall is uneven - it’s easier to see in videos but hopefully pictures show it a bit

My biggest concern is the travertine pavers. There’s at least about 30 spots where edges are sticking up uneven. And then there’s about 5 when you step on them the entire thing actually moves and almost feels like it’s going to pop up. I have videos of it but can’t load them. The edges push up when you step on it and the whole piece moves a bit.

Also, they did not use a wet saw for anything. Everything, including the coping was cut by hand (where they doubled it up around the spa).

My concern is the installation of the travertine and the fact that some are actually popping up when I step on them, and then that there’s so so many that have lips to them (toes get stubbed on) and if that will get worse as time goes on. When it rains, the water clearly pools in certain spots which would indicate it’s not level. Can anyone tell me if this is “normal” with travertine? I want to approach this the right way and want to make sure it’s not supposed to be like that
 
Sorry man. Everybody expects that the sheer price of their project should shield them from crappy work. And. It. Should. But sadly it rarely does. Stay equally firm and polite. You are justified in going buck wild on the stone guys, but you wont get better results.
 
I had my PB tell me during one of our heated exchanges he hadn't been talked to like that since he was 8 years old. I told him to stop acting like an 8 year old then, man up and fix the issues (which he did).
Regret talking to him the way I did but I was pretty much at the end of the line with my patience.
 
Everybody reaches their limit. From everybody's stories, usually rightfully so. But i deal with the general public and i have 2 categories that i lump customers into. Those that have a right to be upset and need special attention, and those that are just jerks and unable to please. A customers attitude may totally sway me one way or the other.
