I would run the infinity edge when people are swimming, and have the edge off when not swimming.
A drop of 2" per week, if the pump is off and the pool is not being used, seems a little too much for me...
Have you tried the bucket test?
Just to be clear.. When the pool drops 2" the catch basin stays at the same level or goes down, but it does not come up.. Something you should look at during your tests.
