Cooked this chicken to test out the brine recipe before using on the Thanksgiving turkey. It turned out great! Brine consisted of buttermilk, bourbon infused syrup, salt, garlic powder and onion powder. Brined for about 20 hours. Sprinkled bird with a little Lanes Scorpion Steak and R Butts R Smokin Cherry Habanero seasoning and smoked with a medium piece of cherry wood for about 90 minutes at 350°. Had a nice crispy skin, which is usually elusive for me.

I’m planning to use the chicken in salsa verde chicken enchiladas, but I devoured a leg and thigh after the resting period….

Saturday night, so it was steak night!!! Tried out the new Air fryer for the French fries. They came out ok, but not amazing. I guess I was hoping for better.

We have not had good luck with french fries in the air fryer ---- tater tots are MUCH better. Chicken Wings are the bomb.

So who has a big Thanksgiving cook coming up? My turkey is in the buttermilk brine and I’ll be making the gravy today. Turkey goes on the smoker in the morning!
 
Wife works tomorrow, so we are doing it on Friday. Have a 25lbs’r that I am going to try to fit on the egg. Going to brine for the first time.
Brining is the way to go. We have 2 birds brining now. Brine consists of one cup sugar and one cup brown sugar to 2 gals of cold water, 4 oranges and 3 lemons quartered and squeezed, 6 sprigs of thyme and 6 sprigs of rosemary. :cheers:
 
As we wind down 2021, I was able to get one more cook in before the weather turns nasty here. Cooked a pan-seared, teriyaki glazed Chilean sea bass with buerre blanc (French butter sauce). It’s an easy recipe, as I was able to do it with my dominant arm in a sling due to recent shoulder surgery. :) My wife made the creamed sweet potatoes, which included a bourbon-infused maple syrup.
