Official 2017 BBQ, Smoking, Grilling, Baking and Beer thread

So if dinner is "6pm", do you guys place the butts in the smoker at 6am?

Yep....but, since the smoker typically requires a little setup to get it started, you should probably wake up at 4am to take the shoulder out of the fridge and let it warm up a little and then get the smoker started....it's a labor of love....
 
Interesting on the mustard "rub", I've never tried that method, have always done either a brine or just a dry rub. Has anyone ever tested the mustard rub method vs. a basic dry rub? I've seen numerous YT videos with ppl using the mustard rub method, does it really make a difference? If it does, is it in the taste? appearance?

The mustard allows more rub to adhere to the meat resulting in a thicker, crustier bark. Flavor of the mustard cooks out.
I don't always use mustard on my Boston butts but do prefer it.

Topped it with sauteed onions (olive oil, oregano & a hot cast iron pan) and a mixture of chopped tomato & cucumber. Tzatziki sauce on the side.
