It's fine to use I do it all the time. Mix it a little thicker and use a sponge to wipe down underside and the set spot so you get high bond. Theres alot of dust on stones from release agent during manufacturing.

This looks great! I will be showing my wife because it is almost exactly what i just did for the coping, and we are trying to figure out what to do for the patio.

yeah i don't plan on doing a border, either - this is pretty close to exactly what i am going for - i used 14"x4'x2" bluestone treads with an eased edge - very similar to what you have going on here, and i had all the same questions about inside and outside corners, looks like we came to very similar solutions.
Looks awesome, glad I could help. Nice tight gaps amd nice corners, I almost always 45.clip them for safety to swimmer's, it looks slick too. The only issue I can spot is the missing adult relaxing with a beverage
