Multi-filter system in 80k gallon pool

We need to drain __gallons of water each day for Public Health requirements based on number of bathers.
We have 3 sand filters with rotary valves and each has independent backwash/drain plumbing and ball valves
Can I drain/backwash 1 while the others are running on filter?

Yes. In very large commercial pools that's how it is done so that filtration does not stop.
