Do you understand the light tan edging on the outside of your stone is an expansion joint and has to have flexible mastic?
The grey between the stone is type S mortar.

I would dig out as much old stuff as possible. The more new stuff you get in the better it will hold up. Type S is correct if you want it to last seal it all when done
