Temperature sensors do not have a polarity. I would connect the blacks together and white to red.
 
Sensors use resistance, so cutting and splicing is a bad idea, as you can change the resistance on the circuit and so throw off the sensor. Not all sensors are made at the same resistance, so they are not always interchangeable. Balboa and watkins sensors are over 10,000 ohms apart at 104*, for example. So you should use the sensor made for your controls. It should plug in with no changes needed.
