How are semi inground gunite swimming pools done?

We just had our pool dug and rebar is in. The grade is very high and our yard is kind of small to regrade to the height of the pool in one corner of our yard. Does anyone know how hard it would be to shoot the gunite so that the back wall anc the left wall of the pool sticks out of the ground some? Do they just hand form this or do they need to form something to shot up to to create a smooth backdrop to shot to? It’s the weekend and I won’t get an answer from our builder until Monday and it’s killing me to not know yet. Attached are some photos of the yard, plan and an inspiration photo. We like raw concrete and have a retaining wall against the house like that do we would be good with that as the finish but if we had to we could clad it also.

Could there be any code issues with the pool raised 18” or so out of the ground?

Nope, you can have a raised beam as far out of the ground as you want/plans call for, mine will be about a 6 inch raised beam...

It was backfilled and looks good with the raised bond beam. Thanks for everyone’s help. Here is the coping (techo-bloc) and waterline tile. We are doing French grey plaster.
