Gunite pool new build - WA state

Hi, TFP community! My wife and I are considering building a gunite inground pool at our house. We're located in the southern part of Washington state. We have kids aged 5 to 10, and we'd like to create a nice place for them to play in the pool.
I've read through TFP posts and found a lot of helpful information. We're about to start getting quotes from PBs, but before that, I'd like to finalize all our requirements and would appreciate your input on whether we're missing anything.

Size: 16' x 40' (rectangular) with 3'6' - 7' depth (or should we go better with play pool?) with white plaster finish

@ajw22 thanks! I read all those articles and more; they're very helpful! I'm still working on getting more information about pool builds and obtaining quotes.

I have talked to a few pool builders, and two of them recommended the Hayward brand over Pentair because it offers better customer support and quality. What does the community think about those two brands? If we use the Hayward brand, what will be the list of equipment equivalent to what we have for Pentair?
 
I would go with the play pool no deeper than about 5 1/2'. We have one that is about 3'6"- 4' at the 3 step stair end (along with a 6" Big First Step as it was called 20 yrs ago), 5 1/2' in the center and 4 1/2' at the far end. It works well for volleyball, basketball, cannonballs, shallow diving, jumping off the waterfall, running in from the grass, Marco Polo, mermaids, playing monster, etc. Not too deep for the kids to swim to get toys from the bottom but shallow enough for adults to be in the middle on their tip toes when playing volleyball. I don't believe there is a need for the UV Sanitizer. That's what chlorine and your salt cell are for.

I think Pentair has better consumer customer support and quality.

Pentair support will talk directly with customers. Hayward support will tell you to talk to your builder. Hayward more locks in support and parts with authorized dealers then Pentair does. Depends how much you want to be dependent on Hayward dealer for service.
