Grout for coping stones?

What would be a better choice ( last longer, very little maintenance)for a 1/4” grout joint on copping pavers. Type S mortar of laticrete epoxy grout?

Type S will fill any joint. Make sure you seal the coping first if its porous or you will have streaking where the mortar was worked in. Test a scrap if not sure. The only place worth using epoxy grout is waterline tile. You can tint the mud if you need to. Quickcrete pro finish is pretty white when dry for example
 
I’m researching the same question for my coping project. My grout lines will be 2/5”.

jimmy, would you seal bluestone- I’m reading two camps. One says don’t do it, the other says yes.
