The ground around the pool is above the boards in some places after dig. Builder said they will level it later.is that normal. We r supposed to Gunite this week.

Every site is unique, so perhaps post a couple of pictures. It's possible the site can be leveled after, but can't really tell from what you've explained so far.
You could ask the builder about surface runoff water, and how that will be kept out of the pool.

Having issues posting a pic. They never leveled the yard before digging. While digging they did make sure the board that runs the shape of the pool is the same height on all sides. Thing is there are parts of that board that is above the yard in some spots and below in other.

remember most coping is 3"thick give or take and the pool is usually higher a few inches and the grade around the pool is brought up to it to allow water to run away from the pool. In a rain you want pitch away from pool otherwise all the dirt/debris on the pool deck would run into your nice clean water
