I need to replace my above ground Hayward 1.5 Century pump. It has the locking L520 plug. If my new pump comes with a standard three prong plug, do I just switch it like I would with an electric clothes dryer?

If they are both 120v then yes. Or you can change out the outlet to a standard gfci if you feel comfortable doing so.
I personally would rather have the new cord than an old brittle weathered one and also the convenience of a normal duplex gfci receptacle especially since I prefer to use a timer for my pump.
