So I almost have the water below the return. I loosened the clamps, but I can’t seem to get the hose off the return. I’m worried I’m going to break something. Going to try to do it again tomorrow when I have more light.

Is it a traditional hard sided AG pool or an Intex/Bestway type. Typically with a traditional pool you loosen the clamp up a lot, give the hose a little twist and off it comes. If you installed it, it's got to come off assuming it wasn't glued on.
Standard flex hose attached to the return? As was said, loosen the clamp a lot more than you think you need to, then twist it back and forth. It will loosen.

You can carefully warm it with low temperature heat gun then the hose becomes more pliable and easier to back off. As I said low temperature and carefully.
