I can bring out a bench power supply instead of fiddling with a transformer :). Is it just a relay inside, power = open, no power = closed?

The gas valve is opened by 24V put on it and is spring loaded to close when power is removed.

Are there any safety issues that could be present that would push me to just buy a new gas valve, or if I ensure closure and opening I am good??
A gas valve can become clogged with sediment or rusted if the gas line is not properly installed.

See if your gas line and sediment trap is correctly installed as described in Heater Maintenance - Further Reading

Also, any tips on the vacuum tubes to use to replace the ones on the valve and blower? Are they standard, or do I need to purchase Pentair air orifice ones?Regardless of the operation of the valve, I should probable replace these, they appear to have degraded over time.
If you are are replacing the Air Flow Switch, Pentair sells it as a kit for around $80 and it includes the tubes.
 
Back out at it today.. got cover off and this looks non optimal :). I need to figure out how to get this thing counter rotated safely and I will test if the fuse no longer blows!!

Aaaannnddd.. she lights up and appears to be heating….. at least it sounds like it..

I think I uncovered at least a couple of things I need to track down prior to feeling 100% comfortable with the safety of the system, mainly confirming if there is a heat exchanger leak. So I think I am going to disconnect power from this sucker again until I get the energy get the manifold off. Thank you all for your help! Having experts here that take time out of their day to help us laymen really gives us confidence to tackle something that would normally be outside our comfort zone!!

For those at home, it appears there is a square nut on the gas valve which could be secured by a wrench when tightening on the gas line!! I did not feel comfortable only using this to counter rotated the gas valve back to its original position ( for fear of it snapping) I used both a pair of large water heater pliers on the actual valve and an adjustable spanner on the square nut at the same time. The valve rotated relatively easily without fear of anything being damaged!!
