Pool is getting shotcrete on Wednesday (two days). What questions should I be asking?

I'm told they are using over 3000 lb shotcrete but that's all I know right now. Is 3000 lb the right number?

In Southern Calif, so do I need to ask about misting/keeping it wet? What about using "rebound"? Any other questions I should be asking?

Read the Gunite section in Construction Best Practices - Further Reading

Your pool engineering plan should specify the minimum gunite specifcations. It depends on your pools engineering and the rebar setup.

It is recommended to water new concrete. Read Watering New Gunite and Concrete - Further Reading Watering can double the strength over air curing of the gunite.

Rebound should never be used, They should gather up the rebound in buckets and haul it out and not use it to fill spots. Lazy crews use rebound as fill so they don't need to haul it out.
