Contrasting your build with mine makes me jealous. I think you started your dig a day later than me. You have gunite And we are still digging. 
Worker 3 : They must have sentimental attachment to this downspout to leave it here like this, we gotta go around it.
The title of this thread is not for nothing! Contract was signed in March. Went from grass to gunite in 3 days 7 months later. I'm still catching my breath!

Twas another relatively quiet day. Started the shell watering in the morning. I was not expecting it to steam up! That was neat to see. The water also turned a nice radioactive green. The plumber showed up, took some measurements, then left. Had some equipment dropped off, and the clean-up crew removed the forms from the gunite shell.

The plumbers showed back up to finish the plumbing back to the pad and drainage out to the street. We were in and out all day so I didn't get a chance to take pictures of the piping in the ground before they refilled them. I'll ask the PB for a copy of the piping plans for later reference.
11-Oct The structure guy did a walk-through for the porch extension and took some more measurements. He said they might be able to get us on the schedule for late next week.

Have them spray paint the general lay out and snap a pic of that. All you need is to know where you need to dig gentle of the time ever comes to plant bushes or whatnot. For example, if the pipes are tight to the shell, you can dig closer to the fence with no worries.

Make sure to move your hose holder before they put a heater or filter in front of it and you can’t move it.
@renesme You may ask the structure crew to move your gutter downspout. Maybe they can cut it up high (midway on the wall) and make 2 90 deg (or even use some 45 degs) turns to bring it back down past your equipment pad.
I don't see where the bonding wire has come back to the equipment pad. You may want to find that and have it marked.
Are they going to put your electrical/automation cabinet to the left or the the right of the equipment pad? You may want to ensure all is ready for that done properly.
Plan to to purchase some pipe insulation to wrap those exposed water pipes. I also use a heavy tape (Christy's - I think it is 10mil) to wrap around the insulation. That stuff holds up well to the sun and cold.

This is a good point I'll need to bring up with the PB. There is some wire coming off the pad, and likewise also from the pool, but they don't seem to connect. I'll ask.
Probably on the right? I'm not sure if there is enough room on the left side of the pad, but that would be an easier-to-access location. Another good question for the PB since the electrician is supposed to come out Friday or Saturday.
Absolutely. I actually have some left over from when I needed to re-wrap the main house water line a few years ago. Of course, I'll wait for this mess to be done before doing it.

What's Next
13-Oct: Materials selection is today. I think the waterline tile is going to be the hardest to choose. I like the subway tile look, either 1x2 or 2x4, but no glass tiles. Anxious to see what they have available! There are sooo many pretty tiles out there; it's going to be hard to choose! I think I fairly well know what I want for the other materials.
15/16-Oc: Electrician scheduled to come out
Next week, from what I understand, we are penciled in for porch extension, tile, and coping. They've started purchasing the porch materials.

Where do you find insulation for piping? I've only seen insulation for 1 inch pipe, like the ones used for sprinkler systems. I'm in Katy myself and would like to get some for my pipes in case we have a similar event like what happened this past February with the freeze.
For TX I'm assuming the hardware store doesn't carry much. Amazon has tons. Search up 'insulating pipe wrap' or '2 inch (etc) pipe insulation' the 2nd comes in both home insulation style and foam tubes.

It's in the plumbing area in any of the big box stores. I purchased mine at the Lowes off Spring Green. If you search their website for "PVC insulation" you'll see what the options are and it'll tell you aisle and bay on where to find it.
I also recommend getting some wrapping tape to seal it all up nice and good. It's in the same area.

Oh lort today was a day.
The structure crew showed up this morning and started their thing. Was not expected, but ok, let's keep things trucking!! However I am not happy with the roofline they've slapped up so far. I can't get a good picture angle from the outside without dragging out the ladder, but if the sheathing in the pic below is following the top then this is completely unacceptable. There is no slope on this V they've created between old and new. It is going to encourage water retention and we'll have water damage in a month. I've expressed my dissatisfaction with the PB. Still waiting on a response. I'm afraid this is an official "big deal" and I can't accept it as-is. If any of you see something different here, you are welcome to talk me down!
Also had our materials selection this morning. The spraydeck, travertine, ledger, and pebble were all easy to pick out as I already knew mostly what I wanted there. The waterline tile was a different story. My first 20 picks were all out of stock. Honestly it would've been faster if they just gave me a list of what was in stock instead of having them call the rep every. five. minutes. checking on the next-in-line picks. I'm happy with what we ended up with. It is actually quite similar to our first choice, so yay.
When I asked, confirming that the tile selection will also be used for the toe tiles, the office lady let us know that "oh no, we don't do toe tiles with pebble plaster". Well it is in our contract so yes you will. They let me know afterward that they made an error in the contract, but they will so graciously honor it as written. Insert eye roll here.
They also claimed they've never heard of hand hold tiles. Despite them being in the very catalogs they have in the office! They are "looking into it" and TBD if they will order them or I will need to buy them on my own.

Oh, and for the record to top off the day, Lowes' selection of outdoor fans in-store is abysmal. I'll order those online I guess here in the next couple days.

Another "exciting" day in the books. You can sorta see in the porch pics above that the roofers left the roof open. All was well and fine until I got up this morning at my usual 5 AM and happen to see a Facebook post about some major storms to the west of us. A quick radar check, and a few choice words were said. Woke up the other half and we cobbled some tarps and canvas drop cloths and staple-gunned things sort of in place but it was really not well covered. A few panicky texts to the PB at 6:30 AM and, to his credit, he showed up at 6:45 to re-jigger the tarps and add in some trash bags to the mix to try to get things covered better. The structure crew said they wouldn't be able to make it until later. They showed up at 8:30 just as it started pouring and put up more tar paper and plywood to try to get everything covered.
Nothing we could do at that point other than monitor the inside walls to make sure no water was getting in. Fortunately there wasn't much wind so the rain came staight down instead of sideways. All things considered it looks like we made it out without any major issues. To the relief of everyone.

When I picked out tile, I asked about the toe tile as well and was told they would give me a price...and I whipped out their sale sheet (or whatever it is called) that goes thru all the stuff that is included standard and toe tile was listed...thank you very much. The structure guys came back and finished 90% of the roof. I still need to get a ladder to check they sloped the roof as they should. The front edge looks ok, but it is hard to see beyond that standing on the raised wall of the pool. I made it very clear that I would not accept a roof with a flat V in it. PB assured me it'd be there. Trust but verify!

The electrician came and did their thing. The lights in the pool and spa are wired up. The bonding wires placed around the pool and pad. The can lights, switches, and outlets added to the porch extension. The subpanel and Intellicenter aren't installed up yet. I assume all that will go in towards the end. We got the hand hold tiles ordered, 3 or them will be placed along the back with the raised wall. I also went ahead and added having them spraydeck the back of the raised wall as well. I was planning on just painting it myself, but figured it was worth the $125 to just have them do it. One fewer thing for me to deal with! I also ordered the fans for the porch.
Next up:
