I've read to use hydraulic concrete instead of sand mix for gunite pool. Does it make a difference?

Upon watching the full video, when he takes off the old seal from the impeller at around 8:16, the rubber side is up. Then when he re-attaches it, at the 13:00 min mark, the metal side is up. Did he make a mistake?
