For winterizing an AGP, what works better in the skimmer: gizmo, pool noodle, or just a plan old water bottle? What worked best for everyone?
If the skimmer pipe is staying, it needs to be plugged and gizmos are GREAT for their cost. My last ones were 8+ years old when we moved.
If you can take the skimmer plumbing off, I'd leave the pipe open so it can drain, and have a stepping stone below so it doesn't erode the wall edge.
Either way I'd stuff the skimmer with pool noodles, particularly the mouth area. If the pool ice grabs a hold of the skimmer and shifts, it can buckle the whole wall.

I drain below the skimmers mouth, leave my skimmer plumbing open/disconnected & lay a squishy foam football 
in there incase water happens to collect

I put a plate / plug in the skimmer face (I don't drain my pool) and I leave the suction pipe open.
My skimmer is hard plumbed to my filter which sits about 10 feet from my pool. I leave the hard plumbed pipe attached to the skimmer, so I don't worry about water eroding anything around the pool
