Using pre casted coping stone

I’m using precast concrete coping, upstate NY. Steel wall vinyl liner. Coping is about 1.5” thick. I’m being told by the manufacturer to pour a collar around the whole perimeter 5-8” thick (top perimeter). It’s seems like alot of work for that. Is that necessary? Basically from what I understand the coping sits 1/3 on top of the Steel wall (with some type of bonding agent, or mortar, silicone etc) and the other 2/3 sit on the collar pour. The pool is getting back filled w stone and the patio is going to be normal 3-4” broom finish concrete (which butts up against the coping). Is there a more economical way to do my coping than described?

If you search around the internet, you'll see everything from 2" to min 6" with rebar (Unilock's recommendation). In my case, I've backfilled with 3/4 gravel that's gone through winter now, and I have high confidence that 2" of concrete will suffice.
