Using just about a gallon of LC 12.5% everyday, seem normal?

That would add 5 ppm per day to your pool. That's high, but you are in AZ. How are you testing and what is your CYA?
 
I'd take it up to 60 for extra UV shielding, that's the high for a non swcg pool.

I’m going on vacation in 2 weeks for a week and had planned on using some pucks to get me through. Not sure how many I should leave in the floater. But that should raise my cya, correct?

It will. You can also raise your FC to 20 right before you leave too. That and the pucks will hopefully get you through the week. Do you have any way to cover the pool? That would really be helpful. Maybe just purchase a cheap tarp at the hardware store to anchor over it if you don't have anything already.

I live in Chandler. From what I remember when I used solely liquid chlorine, that isn't too drastic. I seem to remember adding 2 gallons every 3 days to keep mine in range, slightly smaller pool. Water temps here are crazy in summer, and if you get full sun all day like my pool, it eats it up. I went SWG and wont go back.
