Hello. Obv newb here.

My pool seems to have a rough surface (same for spill over hot tub). Feels like concrete or plaster perhaps ?

Would it be a plaster pool? Or a fiberglass one? How would I be able to tell?

I think vinyl would be much smoother.

ps. I just read about the Concrete pool using the Gunite process. Is that what is meant by the "plaster" pool? Or is concerete different than plaster?

The shell of a pool is gunite (or shotcrete, a similar process) that is high-pressure applied to the re-bar that lines the hole dug by the builder. Plaster is applied over that shell. Fiberglass can also be used over a pool that has been plastered.
A fiberglass pool is like a large bathtub that is placed in the hole that is dug.
Vinyl is very smooth and feels like plastic.
