I’m in the process of installing a heater. I have an SWG do I still need to install a check valve?

You only "need" to install a check valve if you have a tab feeder...

That said, there was a recent discussion about some heater manuals still saying a check valve is required for warranty purposes...

A SWCG will not in any way cause your heater to rust out like it can do with a tab feeder. But pretty cheap insurance if you are worried about your warranty.

I can’t remember where but I thought I read to install a bypass just incase theres too much water being pumped through the heater, some will bypass it
Any thoughts on this?

I like the idea of having a heater by-pass.. This would allow you to by-pass the heater the 90% of the time when you are not using it.. it would also include a check valve, which eliminates any warranty issues, and a well designed by-pass would allow you to completely disconnect the heater, if that ever because necessary, and still have the plumbing water tight.
