My pool and spa is about 4 years old. We appear to have a problem with the material of the spillover. It's falling apart. I'm not exactly sure what material it is but is quite smooth. It was installed 2020 and within a short period of months it started to fall apart and need replacing. It was replaced under warranty , but now it's breaking up again. It can get quite dangerously...sharp on the edge, plus I have had to re-grout certain areas to minimize water lose.

I guess my question is what material should be used for this? Also should I just be getting a pool company to do this vs DIY (I do enjoy doing my own things where possible).

Other info
My pool is only small (maybe 3500 gallons) and I run the pump full speed for 4 hours per day and on lower speed for 8 hours. Spillover during full speed is a good flow off the edge and into the water. The image was taken when on full speed.
On low speed it is trickling down tile and I am sure is the reason that the grout is eroding on blue tiles underneath. Maybe after it's replaced, I should just be running it for less hours but more on a high speed to minimize this erosion??

Good quality grout should not be eroding that fast. What’s the material the spillway is made of that’s breaking apart? Is it a natural stone? Tile would be a better choice it seems.

That stone even looks soft. You want a hard stone on the spillover. I think your problem will be that you choose white. Natural hard stones are usually dark in color.

Go visit some local stone shops and talk to them about what they have. You need a small piece, and they may have leftovers from a large job. I doubt it will be white.

Then you need to get the chosen stone cut to fit. Some stone shops will cut to the dimensions you provide.

You need to decide if you have the tools and ability to DIY. Talk to some local masons.
