Installed a Poolfactory Saltwater 8000 in 2022. Using a Hayward Is Salt system that's been great. Bolts on buttresses are rusting. They are SS but a low grade 304. Can I replace these one at a time with a high grade 316 bolt without draining pool?

The experimental/curios side of me would say go for it. Ha. It looks like the supports are firmly seated in there to prevent movement. I wouldn't expect any movement when the bolt was removed which would be my main concern so that you could be sure the new bolt would slip back into the hole. Hopefully other AGP owners will reply with a thought........ if you haven't already done them all since Saturday. Bwahhhaaah.
