Re-tiling water line questions

Have a pool (plaster with a built in spa) that is having the waterline tile redone by a highly recommended company that does just this. I know he uses the right materials as he doesn't have any bitter customers for several years. Original tile were a double row and the new is a larger one tile that takes the Original space plus a drop more in height. They cut a line in the plaster to accommodate and there's about 3/4"space they need to replaster from the cut line to the edge of new tile. He says this is common practice which I assume is the only way to get it all flush and even.
When this is all complete and grouted what's is the chemistry process going forward for the next month or so. The original tile line went down hill with the prior poolman as he knew nothing about pool chemistry and had less then half the recommended amount of CH in the mix for a couple of years. I'm looking to balance this right from the getgo.....thanks in advance for all info forthcoming, Allan
 
I thought they were just going to cut/remove some of the plaster. I hope they are not putting some new plaster as there is no way it will match the old plaster.

I am going to ping someone who may know more than me about the grout for the tile. I can't remember if it needs to cure before water is added. @AQUA~HOLICS time to teach this teacher please.

For new construction grout should dry for 24-72 hours before coming in contact with water.
This works well with the rest of the construction process being that plaster typically isn’t installed for a week or two afterwards.
On a re installation of tile I would wait a minimum of 72 hours prior to exposing to water.
