I keep having to turn the our pump off and put it on the rinse cycle for a few mins to get the volume back on the filter setting. Not all the time but way more than we ever had in previous years. I know it’s plumbed right and new sand this year, not over max when I filled the filter up. Is it possible it’s just collecting that much junk? I quit using hair nets because I thought that was the problem, even tho with daily changes they weren’t that bad.

Absolutely. Intex filters and pumps are infamously inadequate.
Backwash, then rinse the filter and then note the clean psi when you go back to filter mode. As soon as that psi increases by about 25%, it's time to backwash again
