I've sent a few private messages this week and I just noticed that they don't show in my "Sent Items" folder. According to that folder, the last message sent was over 3 weeks ago. Anyone else having issues sending PMs?

I have sent and received many PMs in the last few weeks with no issue. I've asked the site admin if there is something he can check.
By default sent PM's are not archived in the users Sent PM folder. You would have had to of manually changed that setting. Odds strongly say your PM's were all sent as they should but not archived. If you want you can try to PM myself to verify they are working.
Leebo I sent a PM to you and realized I have to manually check the "save copy in sent folder" or something to that effect.
