Smoked, Coffee Marinated Tri-Tip
So I got inspired by you guys to do my own coffee marinated tri-tip to see how it would come out. I also did it on my Big Green Egg smoker which is, hands down and without question,
the best smoker EVAH!!!! (Sorry, I can't resist trolling all the Primo and Traeger folks out there

). Ok, so this will mostly be a post in pictures -
Homemade Cold-brew Coffee (it's a lot easier than you think)
This took 24 hours to make the cold brew but it is worth it.
Coffee Marinade
2 cups of cold brew coffee
1/2 cup brown sugar
2 tbsp salt
1 tbsp pepper
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp Kitchen Bouquet browning sauce
Hit the tri-tip with my pin tenderizer and then loaded everything up in a zip lock bag for an 8-hour sit in the fridge.
8 hours later .....
Into the Egg....
It took about 90mins at 225F to cook the meat to an internal temperature of 135F. I use a remote thermometer to monitor the Egg temp as well as the internal meat temperature. The beauty of the Egg is that it has such a huge thermal mass from all the ceramic that, once the temperature gets to where you want it, it stays rock solid. Here's the meat after sitting in the smoke -
Now, the next step is to sear the meat. I took the meat out and opened up both baffles on the Egg, the temperature went up to 650F in a matter of minutes -
When opening the Gates of Hades, be sure to wear your Grille Armor -
Now sear that meat to lock in the juices and give you a nice brown layer -
Sliced and perfectly medium rare -
Serve with your fav sides and a good beer -
This was a really great meal. The coffee marinade really gave the meat a very complex flavor and the low & slow hardwood smoke was a perfect compliment. This is probably the best tri-tip I have ever had.
